Restorative coconut and lime broth.

 
 

Coconut milk, lime juice, chillies, mushrooms, garlic, red and white onion, pak choi, fresh coriander and soy sauce. This was so yum. We haven't really done much broth cooking before so this was pretty new for us. Because of this, we were a little hesitant to experiment with the recipe, so we stuck to the book. It's a super fresh, light and summery coconut broth with lime and soya sauce from A Modern Way to Eat by Anna Jones. It's delicious. Oh and we added a little kalamata olive sourdough with garlic butter to the table to help mop up the final spoonfuls.

The recipe is quick and easy and doesn't require an expensive list of ingredients. We thought we could add a little chicken, but we didn't. It's a super tasty vegetarian meal and we highly recommend!
